This recipe is delicious and nutritious

So I have tried this recipe a few weeks ago and my family loved it so much that they asked me to do it again. It is so good and juicy.  We ate the whole dish up.  YUM!

Stuffed Zucchini pockets


3 to 4 zucchini
1 1/2 lb ground Beef or Turkey 
1 onion that is finely cut up 
1 carrot finely cut up 
1/2 cup diced bell pepper 
1 tsp  Italian seasoning
1/2 tsp salt

1/2 tsp pepper
1 egg beaten 
1 cup marinara sauce

1 cup mozzarella cheese (optional) 



















Preheat oven to 375 degrees F


First:   Slice the zucchini in two, lengthwise. Hollow out the insides leaving 1 inch shell. Slice the zucchini in half crosswise to make 6 pockets. Chop the hollowed out middles into small pieces.


Second: Bring one big pot of water and zucchini halves to a boil for 5 mins.  Remove Zucchini from pot carefully and set aside.

While Zucchini is cooking.  Cook ground beef or turkey
 for  about 7 minutes.  Take Beef or turkey out and set aside.  In same skillet cook onion for 5 mins, then add  carrots, pepper, and chopped zucchini. Itallian season, salt, pepper, egg, and ground turkey or beef and Marinara sauce.



Last Spoon the beef mixture into the zucchini boats and place in a baking pan. Bake in oven for 12 minutes. When ready to serve, sprinkle cheese over and serve.


*You can cook up the zucchini and the insides of the zucchini pockets mixture and refrigerate it until you are ready to add to the zucchini pockets and then bake as directed add 5 mins to the baking time.
